Monday Yums!

Hi everyone! I hope you all had a fantastic weekend! We had a BLAST! Since my husband and I weren’t able to make it home to see my family for Christmas this year, we decided to meet in the middle and have a later Christmas celebration. We headed out to Illinois and spent the weekend together at a hotel. It was so great to get to see my parents, brother and sister-in-law…and they even brought the puppies!

It went by too quickly, but it was so nice to see them! Once I upload some photos from the weekend, I'll have to post them.

The recipe I’m going to share today for Monday Yums is the cake my mom made for my birthday. It’s my favorite and I ask for it every year! It’s super easy to make, deliciously fudgy, and if you’re anything like me, you’ll be tempted to wake up in the middle of the night to grab a slice.

Chocolate Cherry Cake

Ingredients:
- 1 box Devil’s Food Cake mix
- 1 (21 oz) can cherry pie filling
- 1 tsp. almond extract
- 2 eggs
- 1 c. white sugar
- 5 tablespoons butter
- 1/3 c. milk
- 1 c. semisweet chocolate chips

Directions:

1. Preheat oven to 350ºF.

2. Prepare a 9x13 pan by spraying it with non-stick spray.

3. In a large bowl, combine cake mix, pie filling, almond extract, and 2 eggs BY HAND.

4. Pour batter into the prepared pan.

5. Bake for 25 – 30 minutes or until a knife stuck in the middle comes out clean. Let cool.

6. Time to prepare the frosting. In a saucepan, combine sugar, butter, and milk. Boil for 2 minutes, stirring constantly to avoid burning it.

7. Remove it from the heat and stir in the chocolate chips until it comes out smooth. Immediately pour over the cake and enjoy!
